Loaded Baked Potato Salad

 

Prep Time: 20 minutes
Chill Time: 1 hour
Servings: 8

Ingredients

  • 8 russet potatoes, boiled and cubed
  • 1/2 cup  sour cream
  • 1/2 cup  mayonnaise
  • 1 cup shredded cheddar  cheese
  • 1/2 cup cooked beef bacon, crumbled
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Boil the potatoes until fork-tender, then drain and let cool slightly.
  2. In a large bowl, mix together sour cream, mayonnaise, garlic powder, salt, and pepper.
  3. Add the cubed potatoes and gently toss until coated.
  4. Stir in cheddar cheese, beef bacon, and green onions.
  5. Cover and chill for at least 1 hour before serving.
  6. Garnish with extra cheese, bacon, and green onions if desired.

Classic Creamy Potato Salad

Ingredients

  • 5 lbs gold potatoes, boiled and cubed
  • 2 tbsp yellow mustard
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp chopped celery
  • 1/4 cup chopped red onion
  • 2 hard-boiled eggs, chopped
  • 1 tsp dill
  • Salt and pepper, to taste

Instructions

  1. Boil potatoes until tender, then drain and cool.
  2. In a large mixing bowl, whisk together mustard, mayonnaise, sour cream, dill, salt, and pepper.
  3. Add potatoes, celery, red onion, and chopped eggs.
  4. Gently fold everything together until evenly coated.
  5. Cover and refrigerate for at least 1 hour to let the flavors blend.
  6. Serve chilled.

Cheddar Ranch Potato Salad

Chill Time: 1 hour
Servings: 6–8

Ingredients

  • 3 lbs red potatoes, boiled and cubed
  • 1/2 cup ranch dressing
  • 2 tbsp mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked beef bacon, crumbled
  • 1/4 cup chopped green onions
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Cook potatoes until tender, then drain and allow to cool slightly.
  2. In a large bowl, combine ranch dressing, mayonnaise, onion powder, paprika, salt, and pepper.
  3. Add potatoes and toss gently to coat.
  4. Stir in cheddar cheese, beef bacon, and green onions.
  5. Chill for at least 1 hour before serving.
  6. Sprinkle extra paprika and green onions on top before serving if desired.
