Directions
In a bowl, whisk together the flour, ginger, cinnamon, cloves, salt, and baking soda to combine the dry ingredients.
In a separate bowl, beat the softened butter and brown sugar until fluffy and well mixed.
Then, add the molasses, egg, and vanilla extract, mixing until everything is smooth and delightful.
Gradually add the dry mixture to the wet ingredients, stirring until well combined.
Once ready, refrigerate the dough for at least 1 hour to firm up.
Preheat the oven to 350°F (175°C) while the dough chills.
On a floured surface, roll out the dough to about 1/4 inch thick, making it easy to shape.
Cut out gingerbread men shapes and place them on baking sheets, leaving space for them to spread.
Bake for 8-10 minutes, or until they are just set and slightly firm to the touch.
