Pan-Seared Steak, Fried Eggs & Crispy Potato Rounds
There's nothing quite like a hearty breakfast made in one skillet to start the day. Juicy pan-seared steak, golden fried eggs, and crispy seasoned potatoes come together for a satisfying meal that's just as welcome for a weekend brunch as it is for a comforting breakfast-for-dinner.

What You'll Need

1 lb ribeye, sirloin, or strip steak
2 medium potatoes, peeled and sliced into thick rounds
2 large eggs
2 tbsp olive oil, divided
1 tbsp butter
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp seasoned salt
1/2 tsp black pepper
Salt, to taste
How to Make It

1. Pat the potato slices dry with paper towels. Toss them with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, seasoned salt, and black pepper.
2. Heat a large skillet over medium heat. Cook the potatoes for 4–6 minutes per side until golden brown and fork-tender. Transfer to a plate and keep warm.
3. Pat the steak dry and season generously with salt and black pepper.
4. Add the remaining olive oil to the skillet and increase the heat to medium-high. Sear the steak for 3–5 minutes per side, depending on thickness and desired doneness.
5. During the last minute of cooking, add the butter and spoon the melted butter over the steak. Transfer the steak to a cutting board and let it rest for 5 minutes before slicing.

6. In the same skillet, fry the eggs until the whites are set and the yolks are cooked to your liking.
7. Serve the sliced steak with the crispy potato rounds and fried eggs.
